What you will need: 375g Spaghetti 1 clove of garlic 250g of pancetta or chopped bacon 150ml of double cream 75g of parmesan cheese grated 2 eggs 1 egg yolk 1 tablespoon of olive oil
What to do: 1. Bring a pan of water to the boil 2. Add spaghetti and cook and then drain - but save a cup of the cooking water for later 3. Add olive oil to a frying pan 4. Add pancetta and 1 bruised garlic clove (to bruise the garlic, peel it and squash it a bit) 5. Remove garlic when the pancetta is brown and cooked 6. In a bowl mix the eggs, egg yolk, cream and grated parmesan cheese 7. Add egg mixture and pancetta to the cooked spaghetti and the cup of cooking water and stir well 8.
